See, I'm the opposite on this. A paddle mixer can be too rough on the mix (it's easy to overdo it and get bubbles). I've found that hand mixing gives me way more control over the thickness, which matters for how it sets later. Sure, it's more work for the shoulders, but the result is worth it to me. There's a rhythm to doing it by hand that just feels right, you know? Plus, I worry about tools like that becoming a crutch for new folks who skip learning the basics.

Absolutely, that crutch point is huge. You never really learn how the material behaves if you skip straight to the power tools.
