A friend in Portland pointed out my lazy jar cleaning habit
He saw me just rinse my fermentation jars and said, 'That leftover scum is a wild yeast party waiting to crash your next batch.' I started using a bottle brush and a splash of white vinegar on every jar, even if it looks clean. My kimchi in jar #7 finally stopped getting that weird filmy top. Anyone else have a simple cleaning step they added that made a big difference?

lol "cold sweats" over a jar? seems a bit much. i just use hot soapy water and it's always been fine.

Wait, you were just rinsing them? Like, with just water? I have to sit down. My brain just short-circuited picturing that. I get cold sweats if I don't boil my jars or hit them with a bleach solution (a tiny bit, in a lot of water). The idea of a wild yeast party is too real, I lost a whole gallon of sauerkraut to something like that once. It looked like a science experiment gone wrong.
