My neighbor's 'perfect' grilled cheese is a crime against sandwiches
He insists on cooking them low and slow for almost 15 minutes, which just steams the bread into a sad, pale, greasy sponge. I finally brought over my own skillet, made one in about 3 minutes on medium-high heat, and the crispy, golden-brown result left him speechless. Are people really out here boiling their bread in butter instead of frying it?

That's not a grilled cheese, that's a bread soup. Did you at least get him to admit defeat?

Oh man, that sounds awful. I mean, a pale, greasy sponge is exactly right. It's like he's just trying to melt the cheese with sad, wet heat instead of actually cooking the bread. Good for you for showing him how it's done. That crispy sound when you bite in is the whole point.
