Update: My sourdough starter finally died and I'm relieved
I mean, I spent months babying that thing, feeding it flour and water like clockwork. Idk, maybe it's just me but the whole sourdough craze feels like a huge time sink. I'd wake up early to check if it bubbled, only to have my bread turn out dense and sad. The waiting game for it to proof took forever, and I missed so many breakfasts because it wasn't ready. People act like it's this magical process, but honestly, store-bought yeast gets the job done in a fraction of the time. After all that effort, seeing it mold over was almost a blessing. I'm done with pretending that slow fermentation equals better flavor when my quick rolls taste just as good. So yeah, no more sourdough for me.
