My worst barbecue weekend ever, three ruined briskets in 48 hours

Last August I did a backyard comp for my street and every single brisket came out like shoe leather, even the one I wrapped at 165 exactly. I think the issue was my smoker's temp swings from that cheap gasket kit, but I'm not sure. Has anyone else had a whole weekend fall apart and figure out it was one tiny fix?

...and that reminds me of the time I spent a whole Saturday babysitting a pork butt, only to realize my probe thermometer was reading 20 degrees off the whole time. I kept pulling it early, thinking it was stuck, and finally just went by feel. It was a 3 dollar probe from the hardware store, that one little thing ruined 8 hours of my life, lol.
