Spent $120 on a fancy pellet smoker tube, still use my $8 foil pan hack
Bought a stainless pellet tube back in July after watching all those smoke ring videos, but it kept going out mid-brisket and gave everything a bitter taste. My buddy over in Austin showed me how to fold a foil pan into a smoke sachet with wood chips and punched holes, and it runs clean for 6 hours at a fraction of the cost. Anyone else had luck ditching a gadget for a DIY fix that actually works better?
Six hours of clean smoke from a foil packet seems like a happy accident more than a system. Folding tin foil to get consistent airflow sounds like it depends on how you poke the holes and what you folded that day. I got a smoke tube for tailgating once and it worked fine, so maybe your pellet brand was the issue. Bitter taste usually means too much smoke, not the gear. If it really runs six hours every time, cool, but I would not bet a brisket on it without testing it a few more times.
