Walked into Franklin Barbecue expecting hype, left convinced

Watched them handle a 15-hour brisket cook and now I get why people wait 3 hours in line, anyone else have a place that flipped your opinion on what 'good' BBQ actually means?

Franklin is great but I gotta push back on the idea that 15 hour cooks mean better BBQ. Plenty of joints doing 8-10 hour briskets that come out just as tender and juicy, sometimes even better because they don't dry out the flat. The real trick is knowing your meat and your smoker, not just throwing hours at it. I've had BBQ from a gas station in Lockhart that beat some of these prestige spots purely because the pitmaster understood his setup. Franklin does a specific style of super moist, almost mushy brisket that a lot of people love, but it's not the only way to do it right. Good BBQ is about consistency and flavor balance (bark to fat to meat ratio), not just how long you babysit a fire.
