I used to just dump the fryer oil at the end of the night. Now I filter it halfway through service.

My deep fryer's filter is mesh, I change it every like five batches and honestly haven't noticed much difference in oil clarity or taste. Idk, maybe my oil just isn't lasting long enough to see a benefit, but I feel like people get real intense about this stuff. Seems like one of those things where it helps if you're frying massive amounts all the time, but for a regular person it's probably fine to just swap the oil.
