Spent $120 on a boning knife I thought was overkill. Now I get it.

Been cutting for about 8 years and always used the house knives at the shop. They were fine, I thought. Last month I finally dropped $120 on a decent Victorinox semi-stiff boning knife after a guy at the supply store kept pushing it. First day using it on a pork shoulder was like a different job. The blade held an edge twice as long and I didn't have to fight through the silver skin. Makes me wonder how much time I wasted yanking on dull metal. Anybody else put off buying a good knife way longer than they should have?

Oh yeah, @michael_jones, I saw someone post about this exact thing a few weeks back and it got me thinking. They were saying how they always thought sharpening was too complicated but then found a simple pull-through sharpener and it changed everything. I've been meaning to try a whetstone myself after hearing how much cleaner the cuts are supposed to be. It's wild how we just accept dull knives as normal until someone points out how much easier life could be.
