Switched from a standard boning knife to a 6-inch flexible one for trimming briskets

The fat cap on my last 20 pack of prime briskets was a real pain, taking nearly 45 minutes each to get right. After I swapped to the flexible blade, I could follow the fat seam perfectly and cut my time down to under 25 minutes per brisket. Anyone have a favorite brand for this kind of detailed trimming work?

Honestly, seeing you call that Dexter-Russell your "go-to" really hits home. Tbh it feels like when you find that one perfect tool for a job, you just stop looking for anything else. I see it everywhere, like my neighbor who uses the same old hammer for every project or my buddy who only drives one brand of truck. Once something works that well for you, why change?
