Visited an old slaughterhouse in Ohio last weekend

Walked into this place that's been running since the 1940s and they still use a wooden block for breaking down sides of beef. Made me wonder how many of us even remember how to sharpen a steel properly without those fancy electric sharpeners?

Hell no, I'll take a good electric sharpener any day over some old block and steel. Those old methods are fine if you got all day to mess around, but I got better things to do than chase a burr on a piece of steel. An electric sharpener gives you a consistent edge every time, no guesswork, no wasted time. People get all romantic about the old ways, but they forget how much slower and more hit-or-miss that stuff is. Plus, you can sharpen a dozen knives in the time it takes to baby one on a steel, so let's be real about progress.
