Warning: I spent 3 years pulling pork shoulder wrong at my shop in Omaha

An old timer from Iowa came in last Thursday and watched me break down a shoulder, then laughed and said I was fighting the grain instead of following it. He showed me how to find the seam between muscles with just my fingers, and now I feel like an idiot for all that wasted time. Anyone else learn a basic cutting trick way later than they should have?

You ever have one of those moments where you realize you've been doing something the hard way for years? I spent two years at a diner trimming brisket with a saw because nobody taught me how to feel for the fat pockets. A delivery driver finally showed me to use my thumb to slide under the hard fat and lift it right off. Now I can't believe I was hacking at it like a caveman.

So did the delivery driver just casually walk in and show you that, or did you guys get to talking and he actually took the time to teach you? I'm always curious how those random knowledge drops happen.
