Warning: That supposedly simple lamb breakdown took me 8 hours of pure frustration

Figured I could handle a whole lamb on my own (I've done plenty of pigs and deer). But getting those hind legs off clean? Man, I spent over 3 hours just fighting with the ball joint on the first one. By hour 6 I was covered in fat and seriously questioning my career choices. Ended up calling a buddy from my old shop in Denver at 10 PM for a quick tutorial over the phone. Has anyone else run into a cut that looked easy but just wrecked your whole day?

Haha yeah I've been there. Nothing like staring at a joint at 2am covered in grease wondering why you didn't just buy it pre-cut.

Oh man, the ball joint struggle is real. Took me almost 4 hours on my first lamb hind leg, and I ended up using a hacksaw out of pure desperation. That clean butcher shop look? Yeah, mine looked more like a crime scene by the time I was done.
