That rainy morning at Blue Bottle made me ditch pour-over forever

I was standing in Blue Bottle in Brooklyn back in 2018, watching this barista pull shots with a fancy lever machine during a thunderstorm. The coffee was so smooth and rich that I sold my Chemex and V60 setup the next week. Has anyone else had a random cafe moment that completely changed how you brew at home?

Three years ago at a shop in Portland, the barista handed me a v60 pour-over that tasted like blueberries and brown sugar. It was basically perfect. But I still went home and made pour-overs the next morning. The thing is, that cafe experience was about their water filtration, their grinder costing more than my car, and a barista who spent years practicing. My kitchen setup is never going to match that. So instead of ditching pour-over, I just stopped expecting it to taste like a $7 cup from a pro. My Chemex still makes a solid morning brew, no thunderstorm required.
