Seeing my compost bin get lonely after I embraced fermentation
I began saving veggie scraps for my fermentation jars instead of tossing them. Now those bits turn into things like sauerkraut or hot sauce. My trash output has gone down a noticeable amount each week. It shows how simple home fermentation can reduce food waste. I bet if more people tried it, we'd see less garbage overall.

Whoa that's such a smart way to cut down on waste. I started doing the same thing with pickle brine for marinating chicken, it's wild what you can reuse. That lonely compost bin is a good problem to have honestly. What's the best thing you've made from scraps so far?

Have you tried using stuff like onion skins for broths too? I mean, @wren_ellis12's brine trick made me realize how many kitchen liquids we just pour out.

Wish I could say my scrap ferments were all winners. My beet green kraut turned into a science project I had to bury in the yard. I'm with @bell.alice on the broth thing though, onion and carrot peel broth is a total game changer for rice. My compost bin is basically on vacation since I started using pickle brine for potatoes and saving celery ends for soup. It feels good to waste less, even if my experiments sometimes scare the neighbors.
