My regular at the shop said my sourdough was 'too perfect' and it got me thinking

He's this retired teacher who buys a loaf every Thursday, and yesterday he just casually mentioned my bread looked like it came from a machine. He said, 'Luna, it's beautiful, but where's the character? A real loaf has a few bubbles, maybe a tear.' I've spent two years aiming for that textbook open crumb and perfect ear. Now I'm wondering if I've been chasing the wrong goal, making bread for Instagram instead of for the table. Has anyone else had a customer comment that made you question your whole approach?

Wow, that's a real gut punch from a regular. When @robinb38 talks about bread with soul, is that what they mean, the little flaws that make it yours? Maybe perfect is just another word for boring.

Chasing that "textbook open crumb" is how I ended up with bread that looks like it was made by a very precise robot.
