Vent: Overheard a new baker at the cafe say 'all flour is basically the same'

I mean, I had to walk away before I launched into a whole thing about protein content and regional mills. Anyone else get super annoyed when people treat ingredients like they're all interchangeable?

All water is the same" is the perfect comparison, that's wild. I'd lose my mind hearing that flour take in real life. Some people just have no clue.
