Wait is it safe to put a damp towel right on top of the dough though? I always thought the moisture could make the dough sticky or mess with the texture if it touches directly. I usually just drape it over the bowl edges so it hangs down but doesnt actually touch the dough. Works fine for me and my bread still comes out soft.
