Took me 3 years to figure out I was ruining my brisket by opening the smoker too much
I kept wondering why my bark was always soft and my meat was dry. Then a buddy watched me cook and said 'dude you're losing all your steam every time you peek.' Has anyone else wasted that much time on a stupid habit?

Proper thermometer is what finally fixed it for me. I got a wireless one that connects to my phone so I don't even need to walk outside to check anything. Now I just sit inside and wait for the temp to tell me it's done. Also started using a water pan more consistently and that helped keep the moisture up even on long cooks. Three years is rough but at least you figured it out before you quit smoking altogether.

Phone alerts are nice but I dunno, I like having to actually go check on it. Feels like cheating somehow, like I'm not really smoking anything if I'm just staring at a phone screen.
