Why does nobody talk about how Franklin BBQ in Austin is overhyped?
I waited 4 hours in line there last month and honestly the brisket was good but not life changing. The bark was a little soft and the fat cap wasn't rendered all the way through. I've had better from a guy running a pit in his backyard in Lockhart. Am I missing something or does the hype just outrun the actual product?

@the_beth nailed it. The Lockhart spots ruin you for anything Austin tries to charge $40 for. The fat cap thing was my exact problem too, like they rushed it through the stall. Good brisket but not worth planning your whole morning around.

Right there with you, I did the whole line thing last year and came away feeling the same way. Smoked brisket from a roadside trailer in Lockhart blew that $40 plate out of the water, no contest. The hype train is real but the actual product just doesn't live up to it lol.
