Spent 45 minutes trying to fix a broken hollandaise, turns out my burner was off by 10 degrees
I kept wondering why my emulsion would split every single time so I started checking everything. Turned out my induction burner was running 10 degrees cooler than it showed and that threw off the whole timing. Has anyone else dealt with a thermometer that was lying to them?

Man I heard restaurant thermometers are notorious for being off by 10-15 degrees right out of the box.

10 degrees off seems like a lot. I've got a couple of the cheap stem thermometers from the supply store, and they've never been more than 3 or 4 degrees off after a quick ice water test. You really have to mess up to get a 15 degree swing out of the box. Most of the time it's just a matter of checking the calibration before you use it.

I dunno, "notorious for being off by 10-15 degrees" feels like a stretch. Most basic thermometers are within a few degrees if you test them in ice water, and the good ones are surprisingly accurate right out of the package.
