Oh wow, that's wild. So @vera668, he'd peel it and just run the cut side along the pipe. The sulfur in the onion juice reacts with the gas, makes this nasty rotten smell you can't miss. Old timers had tricks for everything.

Man that's rough timing. Did you have any backup options you were already looking at, or is this a total blindside? I'd be hitting up every local roaster's Instagram today, maybe even asking other cart owners who they use. What kind of beans are you trying to replace, like a specific blend?
