Six ounces per roast sounds high but you might be thinking of the spinalis yield on a whole primal. Some guys cut closer to the eye than they should and end up with cap meat that falls apart.

Drag a razor blade across it at a slight angle, like you're scraping a sticker off glass. You'll feel it catch on any high spot instantly, even one you can't see. That's how I found a burr on a flange once that was causing a steam leak I spent half a day chasing. Works way faster than trying to line up a straightedge in tight spaces.

Been there with so many things in life honestly. It's funny how we can do something one way for years without ever questioning if there's a better way. Like I used to always pull the tab on soda cans toward me before realizing you're supposed to pull it away from the opening to keep from splashing yourself. Or how I'd always try to hammer a nail straight down before someone showed me you gotta angle it just a bit into the wood. Makes you wonder what else we're all doing backwards without even knowing it.
