Honestly feels like people overthink this stuff lol. I get what @jennifer358 is saying about strong cultures, but sometimes the yeast just needs a break. My starter was the same way, it only got happy when I stopped fussing over it every few hours.

inMy simple time zone check each morning saved my work week
Honestly, the fact that we all need these complex systems just to tell time is a pretty sad joke on its own. I just gave up and set every single clock I own, digital and analog, to UTC. Let everyone else do the math for once. My brain is too full of other useless info to also be a time zone calculator. It’s kind of freeing once you stop caring what hour your own wall clock says.

Ever have a client who uses coins as a measuring guide? My buddy had a guy hold up a dime to show how much to take off... then got mad when it was too short. I guess some folks just have their own visual language.
