Actually, I see it differently. In my experience, a baguette is too soft to trust for straight lines. It can curve or have bumps that trick your eye. I always use a tight string or a laser level for fence work, nothing less. That might sound strict, but it saves a lot of trouble later. Using food as a tool makes a good story, but it's not solid building practice. Your client's confusion makes perfect sense to me.
